Nuts come out of their shells to make a statement in fall dishes

Call us crazy, but we’re nuts about nuts, especially in the fall!  Versatile in application, almonds, cashews, pecans, walnuts, hazelnuts, pine nuts and even coconuts add flavor and texture to everything from appetizers to desserts. Chopped, sliced, pureed, raw or toasted—nuts are crazy good in these dishes!

1. Broken Yolk Café

Garnished with a generous portion of sliced almonds, Crunchy French Toast is a trendy twist on a classic. Dig into three slices of extra-thick, batter-dipped egg bread rolled in crunchy frosted flakes and sprinkled with almonds, raspberries and powdered sugar. Finish with a whipped-cream-and-raspberry drizzle, and your day is off to a sweet start.

2. Pomodoro

Toasting walnuts brings out an inherent sweetness and pleasing woodiness, which works so well when topping Butternut Squash Ravioli. Filled with ricotta cheese and pureed squash, the homemade pasta pillows are tossed with browned butter and sage and garnished with toasted walnuts for a dish that tastes like fall personified.

Cashews get an exotic Thai treatment in Cashew Nut Chicken, adding crunch and a distinct, slightly sweet flavor to the tender pieces of chicken, sautéed onion, carrots, zucchini, roasted chili and garlic that comprise this popular dish. Go mild or go wild—the spice level is up to you!

4. Harry’s Coffee Shop

How often have you thought to yourself, “I know I should have something healthy like oatmeal for breakfast, but I really want pancakes…”? Well, the good news is, you can have it all with Oatmeal Pancakes loaded with pecans and fresh blueberries, dusted with powdered sugar and topped with a dollop of whipped cream for just a touch of decadence. We’re guessing that this combo deli/bakery is where the Sugar Plum Fairy indulges on the nut-laden sweets so enticingly displayed in the big front windows. Cinnamon Pecan Rolls, Almond Croissants, Glazed Cookies made with almond marzipan, Apple Nut Strudel—who could resist a platter of sugar and spice and everything nice?

7. Americana Restaurant

Toasted pecans add nutty, textural contrast in this Roasted Beet Salad. The sweetness of the beets plays off the pleasant, slight bitterness of wild arugula, the bright-tasting peppered goat cheese and tangy citrus vinaigrette; but it’s those pecans that raise the satisfying earthiness of the salad up several notches.
